What is Moromi-su? |
|
Moromi-su is made from Moromi (lees) of Okinawa's traditional wine, "Awamori".
Awamori is distilled liquor made from rice. During the fermentation process, special bacterium (black aspergillus oryzae) is used for the saccharification which makes Awamori's lees to contain lots of healthy components such as citric acid, amino acid, variety of minerals, yeasts and vitamins. After the alcohol distillation, lees will be kept and processed it for vinegar.
In Okinawa, Moromi-su is vinegar for all kind of local cooking and also taken by itself as medicinal vinegar.

Moromi-su and other vinegars |
Most of the vinegar's main component is acetic acid. Rice vinegars which are generally used in Japan, coconut vinegars in tropical countries, black vinegar and aromatic vinegars in China are also the same.

But, Moromi-su's main component is citric acid and it is less stimulus sour taste. With other tasteful components such as amino acids and other organic acids, it becomes more acceptable.

Citric Acid
|
Citric acid is found in citrus fruits such as lemon and oranges. In Japan,
old people used to advise that "when you are tired, take sour fruits".
They may know the body recovering power of citric acid.
The efficacies of citric acid as follows;
1) Make body with slight alkaline and improve immune system
With regular intake of citric acid, body fluid become slight alkaline that improve the resistance to diseases and body recovering power.
2) Regulate uric acid
Alkalize urine and accelerate dissolution of uric acid.
3) Improve absorption rate of minerals into the body

Amino Acids
|
Amino acids are critical to life, and their most important function is their variety of roles in metabolism. In human body, 60 to 70% is water and about 20% is proteins. Proteins are main component of muscles, internal organs, blood, bones and hairs, and amino acids are the structural unit that makes up proteins.
The first two amino acids were discovered in early 1800s and about 500 varieties of amino acids are reported. But, when taken up into the body in the diet, only twenty-two (22) standard amino acids are either used to synthesize proteins. Of the twenty-two standard amino acids, eight are called essential amino acids because the human body cannot synthesize them from other compounds at the level needed for normal growth, so they must be obtained from food.
Moromi-su has naturally contained eighteen (18) amino acids that include
all eight (8) essential amino acids, and it is rare to find in any foods, supplements or health foods. Moromi-su
also contains variety of organic acids like succinic acid, malic acid and
acetic acid.

Moromi-su and Fermented foods
|
Most of the countries noted for its long life expectancy, have great fermented foods such as cheese, yogurt, wines, kimchi and others.
In Japan, there are so many kinds of fermented foods like miso, soy source,
sake and pickled plum called umeboshi. In Okinawa, Moromi-su is the most
popular fermented health food.
Because of the westernization of meals and high processing technologies, "processed foods" are widely used and fermented foods are not often served like before.

Present life-style is the results of pursuing easy and comfortable life and doesn't like to change even if necessary. It is also hard to avoid tasty high calorific foods and cannot relief from daily stress.
Metabolism of the body will slow down by aging and it is important to check the quality of foods and regular exercise to maintain body conditions and great fermented foods
like Moromi-su to normalize internal conditions. |
